ahi tuna and avocado stack


The flavors in this ahi tuna stack are some of my favorites! It’s fresh, light and it’s the perfect dish for summer. It’s very easy to make and I honestly crave this all the time! I remember going to The Keg many years ago and always ordering this (for those of you that aren’t familiar with The Keg, it’s a Canadian steakhouse). They had something similar on their menu with crispy wontons and it was my favorite thing to order! I needed to recreate it at home and it was insanely delicious!
There aren’t many ingredients in this dish but it’s an appetizer that I crave all the time! If you can find fresh ahi tuna at your local grocery store, buy it and make this dish! The marinade is salty and has a hint of garlic and fresh ginger. The fresh fish pairs beautifully with the creamy avocado. This appetizer will be sure to impress your guests and your taste buds will sing!

Ingredients
- 1 cup cooked sushi rice (follow the package instructions) Sushi rice seasoning:
- 2 tbsp rice wine vinegar
- 1 tbsp cane sugar
- 1/4 tsp salt
- 6 oz sushi grade ahi tuna cut into 1/4 inch cubes
- 1 tsp fresh lime juice
- 2 tbsp sesame seeds
- 1/2 tsp kosher salt
- 1 clove garlic, minced
- 1 tbsp grated ginger
- 2 green onion, sliced thin
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 large avocado, cut into 1/4 inch cubes Juice form 1/2 a lime
- 2 tbsp fresh cilantro chopped finely
- Salt to taste

Directions
- Cook the sushi rice according to the package instructions. To make the rice seasoning, add the rice wine vinegar, cane sugar and salt to a small saucepan. Bring to a simmer and turn off the heat once the sugar has dissolved. Once the sushi rice has finished cooking, pour the seasoning over the sushi rice and fluff the rice.
- To a large bowl mince the garlic, ginger and slice the green onion thinly. Add this to the bowl along with lime juice, salt, soy sauce, sesame oil and sesame seeds. Mix everything together. Cut the ahi tuna into 1/4 inch cubes. Add this to the bowl and toss with the sauce.
- To make the avocado layer, cut into 1/4 inch cubes and add juice form 1/2 a lime. Add in chopped cilantro and toss everything together.
- Using a round mold, add a few tablespoons of sushi rice, follow by the avocado and ahi tuna,
