crunchy chicken lettuce cups


These are inspired by the P.F Chang lettuce cups and let me tell you, these have become a part of my weekly meal rotation. I crave these all the time and they are so easy to make and packed with so much flavor. These are perfect for when you’re craving takeout. They come together in under 20 minutes and are a great weeknight meal. The chicken is also amazing on rice with a side of stir fried vegetables. I always make a large batch of this because I enjoy having the leftovers so much! There really are not many ingredients to this dish and it comes together very quickly. Ingredients
- 1 pound ground chicken
- 1 small white onion, diced
- 2 tbsp garlic, minced
- 1 tbsp ginger, minced
- 2 tbsp rice wine vinegar
- 1 tbsp sesame oil
- 5 tbsp hoisin sauce
- 1 tbsp sriracha
- Soy sauce to taste
- 1 can water chestnuts, chopped
- 1/2 cup green cabbage, chopped
- 1/2 cup shredded carrot
- 2 green onions, sliced thin
Directions
- Heat a large pan with neural oil. Add the ground chicken and cook until brown. This should take 10-13 minutes. Add onion and cabbage. Season with salt and pepper. Cook until veggies are tender. This should take 5-6 minutes.
- Add sesame oil, garlic, ginger, rice vinegar, hoisin, sriracha and soy. Cook for a 2-3 minutes.
- Add carrot, water chestnuts and green onion. Cook for a few more minutes. Remove from the heat and serve in Boston lettuce cups.
