Panko cheese bites


I always love coming up with new appetizer ideas and these crispy panko cheese bites are one of my all time favourites! These are perfect for a summer appetizer! They’re baked instead of fried which makes them easy to make and lighter in calories. I love making these because they are so easy, addictive and delicious. The crispy panko paired with the warm gooey cheese is a match made in Heaven. You can serve these on a crostini, a salad or enjoy them on their own! I like to enjoy them on a toasted baguette with a jam of choice (fig is great!).

Ingredients
- 1 package of halloumi cheese
- 1 cup of panko
- 1/4 cup grated parmesan
- 2 eggs beaten
- 1 tsp paprika
- 2 tbsp sesame seeds
- 3 tbsp olive oil
- 1 tsp chili flakes
- 1/4 cup honey
Directions
- First you will set up your battering station. Crack and beat two eggs into a bowl. In another bowl add the panko, parmesan and paprika and a sprinkle of salt. In the third bowl add your cubed halloumi cheese.
- Coat your cheese in the eggs then the panko mixture. Place on a parchment lined baking sheet. Place the baking sheet with the cheese in the freezer for 30 minutes-1 hour.
- Remove from the freezer and drizzle with olive oil. Preheat the oven to 425 degrees and bake for 8-10 minutes. Flip and bake for another 5 minutes. The time may very depending on how quickly your cheese becomes golden.
- Combine the honey and chili flakes in a sauce pan and bring to a boil. Set aside.
- Assemble your crostini with toasted baguette, strawberry jam, sliced pear, the crispy cheese, hot honey, sesame seeds and flaky salt.
