spicy honey garlic shrimp


When I want a fast and easy meal during the weeknight, I always make this one! The shrimp are the perfect balance of spicy, sweet, and salty. The glaze is sticky and thick which makes it perfect to serve over rice. I love serving this with coconut rice. It is one of my staple meals! I always crave this dish and it’s so easy to put together.

Ingredients
- 1 pound large raw shrimp (about 15-20)
- 2 tbsp freshly minced garlic
- 2 tbsp honey
- 1 tsp freshly grated ginger
- 1 tbsp soy sauce
- 1 tsp chilli flakes
- 1 tsp fish sauce
- 2 tsp olive oil
- 2 green onions thinly sliced
- Sesame seeds to garnish
Directions
- Mix the garlic, ginger, soy sauce, honey, fish sauce, chilli flakes and olive oil in a bowl. Add the shrimp, cover and set aside in the fridge to marinate for 30 minutes.
- Heat a large non stick skillet with olive oil to medium high heat. Add the shrimp but don’t add the liquid. Sear the shrimp for 2 minutes and then flip. Cook the shrimp for 1 minute on the other side. Add the liquid and cook for another minute. Turn the skillet off and let sit for 1 minute in the pan. The marinade will reduce to a glaze.
- Serve over coconut rice, garnish with green onions and sesame seeds.
