In late summer, there’s always an abundance of tomatoes and I love using them in bruschetta or simply on a piece of toast. If you can find freshly made ricotta, please buy it. You will taste such a difference from store bought. Pairing the tomatoes with the creamy ricotta is the perfect marriage. Top it all off with good quality olive oil and balsamic. Italian food is very easy to make but it’s important that you use high quality ingredients.

Ingredients

  • 2 pieces of grilled sourdough bread
  • 1/2 cup fresh ricotta cheese
  • 1/2 – 1 cup sliced cherry tomatoes
  • fresh basil to garnish
  • good olive oil and good balsamic for drizzling
  • maldon salt

Directions

  1. Brush the sourdough with olive oil and grill it until golden. You can also toast the bread in a toaster or oven.
  2. Layer on the ricotta, cherry tomatoes and drizzle with olive oil and balsamic. Season with salt and top with freshly chopped basil.
