To me, the leftovers from Thanksgiving are the best part about the food. Canadians recently celebrated Thanksgiving and I’m all about using up those delicious leftovers! Adding all of the glorious leftovers to a sandwich is one of the best things you can do. Every bite of the sandwich has turkey, potatoes, stuffing, cranberry sauce and the vessel is toasted sourdough bread. Dip the sandwich into a bowl of hot gravy and you will be so happy. It’s seriously the best thing ever. I added some garlic aioli to mine and it took the sandwich to the next level! I like heating everything up in a pan. Especially the potatoes, make sure you get those nice and crisp! After watching this I need to make another one.

Ingredients

  • 1 cup leftover turkey
  • 1/2 cup leftover turkey gravy + extra for dipping
  • lettuce
  • 1 cup leftover mashed potatoes
  • 1/4 cup cranberry sauce
  • 4 tbsp mayo of choice
  • 1 garlic clove, grated
  • 4 slices sourdough bread
  • 1/4 cup leftover stuffing
  • 2 tbsp olive oil

Directions

  1. Make the garlic mayo by adding the mayo and grated garlic to a small bowl. Season with salt and pepper.
  2. Brush the sourdough bread with olive oil on both sides. Heat a large pan to medium heat. Once hot add the bread and toast until golden on both sides.
  3. In a medium pan heat the stuffing. Once ready remove from the pan and set aside. Add a drizzle of olive oil to the same pan and add the mashed potatoes once the pan is hot. Cook these until they start to become golden. Once golden remove from the pan and set aside. Lastly, heat up the turkey in the same pan and add 1/2 cup of gravy.
  4. Assemble the sandwiches by slathering on the garlic mayo to one slice of bread. On the other piece of bread, slather on the cranberry sauce. Layer on the mashed potatoes, turkey, stuffing and add a piece of lettuce.
