apple Cinnamon streusel loaf


Fall baking is in full swing and one of my favorite desserts to make during the fall is this apple cinnamon streusel loaf. It’s super easy to put together and it’s filled with farm fresh apples! If you have an abundance of apples during the fall months, you need to make this apple cinnamon streusel loaf. I love making this loaf because it has a few different components that make it stand out. My favorite part is the crunchy cinnamon crumble that goes on top. The loaf is finished with a vanilla glaze which makes it the perfect snacking loaf. This apple cinnamon streusel loaf makes for a wonderful dessert, snack in the afternoon or it can be enjoyed with your morning coffee. Your family and friends will love this one! Ingredients – Loaf
- 2 eggs
- ¼ cup coconut sugar
- ¼ cup maple syrup
- ¼ cup coconut oil, melted
- 1 tsp apple cider vinegar
- 1 tsp vanilla extract
- 1 cup shredded apple. (I used one apple)
- 2 ½ cup AP flour
- 1 tbsp ground cinnamon
- 1 tsp allspice
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp Salt
Ingredients – Cinnamon Streusel Crumble
- 1/2 cup AP flour
- 2 tbsp coconut oil, melted
- 2 tbsp coconut sugar
- 1 tbsp maple syrup
- 1 tsp cinnamon
Ingredients – Vanilla glaze
- 2 tbsp butter
- 2 tbsp flour
- 1 cup milk
- 1 tsp vanilla
- 1/4 cup coconut sugar or granulated sugar
Directions
- Preheat the oven to 350° F. Line a standard size loaf pan (8 1/2″ × 4 1/2″) with parchment paper.
- In a medium bowl, add the wet ingredients, 2 eggs, 1/4 cup maple syrup, 1/4 cup coconut oil, 1 tsp vanilla extract and mix to combine. Once combined, add a 1/4 cup of coconut sugar and mix. Stir in the shredded apples.
- In a separate bowl mix the dry ingredients, 2 ½ cup AP flour, 1 tbsp ground cinnamon, 1 tsp allspice, 2 tsp baking powder, ½ tsp baking soda, ¼ tsp salt. Gradually add the wet batter and mix to combine.
- Pour the batter into the loaf pan.
- To make the cinnamon streusel, combine 1/2 cup AP flour, 2 tbsp melted coconut oil, 2 tbsp Coconut sugar, 1 tbsp Maple syrup, 1 tsp cinnamon. Mix to combine. Using your fingers, add dallops of the cinnamon streusel topping on top of the batter.
- Bake in the oven for 35-40 minutes or until a toothpick comes out clean.
- While the loaf is cooling, make the vanilla glaze.
- Heat a small saucepan to medium low heat. Once hot, add the butter and let this melt. Once melted add the flour. Cook for a few minutes. Slowly whisk in the milk, sugar and vanilla. Let this cook for 5-8 minutes until the sauce thickens. Pour this over the loaf once the loaf has cooled for 20 minutes.
