I absolutely LOVE spinach and artichoke dip! Who doesn’t? It’s super addicting and it’s the perfect snack to serve at your holiday party or to bring as a guest. This dip is so easy to make it probably took me 10-15 min to assemble. It’s cheesy and creamy and you can sneak in some spinach or kale. It’s amazing baked in the oven and it’s even good the next day out of the fridge served chilled!

Ingredients

  • 1 cup of chopped spinach or kale
  • 1 white onion, chopped
  • 2 tbsp butter
  • 1/4 tsp cayenne pepper
  • 2 cloves garlic, minced
  • 2 oz cream cheese, room temperature
  • 1/4 cup plain yogurt
  • 1/4 cup avocado mayo
  • 1 can of artichoke hearts, roughly chopped
  • 1/2 cup Jarlsberg cheese or Gruyère
  • 1/4 cup parmesan cheese

Directions

  1.  Heat a pan to medium heat. Add butter and a drizzle of olive oil. Sauté the onions for a few minutes until translucent. Add the kale and garlic. Season with salt, pepper and cayenne. Once the veggies are tender turn off the heat.
  2.  In a large bowl add cream cheese, yogurt, mayo and mix well. Add the artichoke hearts and the veggie mixture. Season with salt and pepper.
  3.  Spread the dip out on a small baking dish and top with the cheeses. Bake in the oven at 400 for 20 minutes or until golden.
