pear & prosciutto flatbread


This flatbread is delicious as an appetizer for a get together with family or friends or it’s great for lunch with a salad. The salty prosciutto and creamy ricotta pair perfectly with the sweet pears and fresh lemon zest. Of course I needed to top this with a generous drizzle of hot honey. It really completes the flatbread. I’ve said this before but if you can find fresh ricotta, buy that instead of store bought. It’s so much fresher and creamier. This flatbread is the perfect balance of salty and sweet. You’ll love this one!

Ingredients
- 1 pizza dough (store bought or homemade)
- 2 tbsp olive oil (for the pan)
- 3 tbsp olive oil
- 2 cloves garlic, finely minced
- 1 tsp fresh thyme
- 1 Anjou or Bosc pear, sliced thin
- 8 slices of Prosciutto di Parma, sliced thin
- 1/2 cup fresh ricotta
- 1/4 cup freshly grated parmesan cheese
- zest from 1/2 lemon
- 3 tbsp honey
- 1/4 tsp chili flakes
- 1/4 tsp salt
Directions
- To make the sauce, finely mince garlic and add to a small bowl. Add fresh thyme, salt and 3 tbsp olive oil. Mix to combine. To make the hot honey, add honey to a small bowl and chili flakes. Mix to combine. Set aside.
- Preheat the oven to 500 degrees F. Grease a baking sheet with olive oil. Stretch the pizza dough out and add to the baking sheet. Spread the sauce evenly onto the dough. Add freshly grated parmesan cheese and dallops of fresh ricotta. Add slices of pears and bake in the oven for 15-20 minutes or until the bottom of the dough is golden.
- Remove the flatbread from the oven and let it cool slightly for 5 minutes before slicing. Slice into rectangular pieces and add freshly grated lemon zest. Drape the prosciutto on each slice and drizzle with hot honey.
