bbq chicken sandwich


My sister told me about this incredible BBQ chicken sandwich that she had while eating out one day for lunch. She told me that I needed to make something like the sandwich she had so I did just that. I made this sandwich using leftovers that I had in the fridge along with some pickled items. This sandwich was cheesy, smoky from the BBQ sauce and had a great balance of acidity from the pickled onions and jalapeños. Definitely make this sandwich if you don’t know what to do with leftover chicken breast. I highly recommend this one!

Ingredients
- 2 tbsp. butter
- 4 slices sourdough bread
- 1 cup cooked chicken breast (shredded)
- 1/4 cup BBQ sauce (homemade or store bought)
- pickled onions
- pickled jalapeños
- 1/2 cup shredded cheddar cheese
Directions
- Spread butter on one side of each piece of sourdough bread. Season the buttered side of the bread with salt and pepper.
- To a small bowl add the cooked shredded chicken and add the BBQ sauce. Give that a mix and add it to non buttered side bread. Top with shredded cheese, pickled onions and jalapeños.
- Heat a large non stick skillet to medium heat and add a small amount of butter. Once the butter is bubbly add the sandwich and cook for 3 minutes per side until golden. Once golden, carefully flip the sandwich and toast the other side. Remove from the pan and enjoy.
