Pimento cheese is a quintessential Southern staple, and more specifically it is an iconic sandwich which is served every year at the Masters. I’m not a huge golf fan but my family absolutely loves it. My dad and sister attended the Masters a few years back and said that it was a life changing event. They needed to try all of the iconic menu items at the Masters, and the pimento cheese sandwich was on the top of the list for them. The sandwich consists of two slices of white bread, pimento, shredded cheeses, mayo and cream cheese. When they first told me about it I really had no idea what to expect in terms of taste. Needless to say I LOVED the pimento cheese spread. I prefer it much more on crackers and like to eat it as a dip. My family and I make this dip every year when we watch the Masters tournament. I tried to make this version of the dip slightly “healthier” by including Greek yogurt instead of all mayo. This dip is highly addictive so you might want to make a double batch. Trust me! Whether you’re a golf fan or not, this dip is a must try!

Ingredients

  • 1/4 tsp of each: garlic powder, cayenne pepper, salt, pepper
  • 1 tbsp white onion, finely diced
  • 3/4 cup plain full fat Greek yogurt
  • 1 tbsp mayo (I used avocado mayo)
  • 1/2 container cream cheese, room temperature
  • 1 cup sharp cheddar, shredded
  • 1 cup Monterey jack cheese, shredded
  • 1/2 cup pimento

Directions

  1. In a medium sized bowl, mix together the cream cheese, yogurt and mayo. Add the spices and mix to combine. Add the onion, pimento and shredded cheese. Let this chill in the fridge for a few hours before serving.
  2. Serve with cracks (I love eating this dip with Ritz crackers) or as a spread on two slices of white bread.
