Ever since I saw the tunacado sandwich from Joe & the Juice I knew I needed to try making it at home. There’s a few things that make this sandwich different from a regular tuna salad sandwich. The first thing is that the tuna is whipped in the food processor, this makes the tuna light, airy and just perfect for a sandwich. The next element is homemade pesto, this adds a salty, slightly garlicky taste. I like to top it off with slices avocado and juicy summer tomatoes. The bread that Joe & the Juice uses is pretty thin but I used my homemade sourdough and it was amazing! This sandwich has great crunch from the bread, amazing creaminess from the tuna mousse and juiciness from the tomatoes. You need to try this sandwich immediately! It’s a really quick and easy lunch.

Ingredients

  • 1 can flaked white tuna
  • 1 tsp Dijon
  • 1 tsp capers
  • 1 tbsp pickle juice
  • 2 tbsp mayonnaise
  • 1/2 a shallot
  • juice from 1/2 a lemon
  • handful of fresh dill and parsley
  • salt and pepper to taste
  • 4 slices sourdough bread
  • 1 avocado
  • 1 tomato
  • lettuce
  • 4 tbsp homemade pesto

Directions

  1. Add all of the ingredients to a food processor and blend until slightly smooth.
  2. Toast your bread and spread pesto to one side of the bread and sliced avocado on the other side. Add a few spoonful’s of the tuna and layer on freshly sliced tomatoes. Season the tomatoes with salt and pepper.
