Steak fajitas are a quick and easy weeknight dinner that I crave often. Everything can be cooked in a cast iron pan which makes cooking quick and easy. I like to sear my steaks whole in the cast iron, this way the meat retains its juices and flavour. While the steak rests, I sauté the peppers and onions. For me fajitas are all about the toppings, I like to have a variety of toppings like pickled jalapeño, shredded cheddar cheese, sour cream and homemade salsa. It’s also nice to make a double batch of fajitas so then you can have leftovers for the week. I like to eat the leftovers over rice or in a tortilla.

Here are some of my tips for getting a nice golden crust on your steak. No one wants a boiled looking steak! You’re going to want to bring the steak to room temperature. Once it’s at room temperature, remove any excess moisture by patting the steak dry with paper towels. Next you’re going to want to make sure that your cast iron pan is hot before you add the steak. Coat the bottom with a neutral oil, I like to use avocado oil. Once the pan is hot, season your steak generously with salt and pepper. I like to season my meat right before I add it to the pan as salt draws out moisture and you want to make sure the steak is dry. By doing this, it will help to achieve a beautiful crust. Once your steak is cooked to medium rare, remove the meat from the pan and let it rest for at least 10 minutes.

Ingredients

  • 5-6 bell peppers
  • 3 white onions
  • 4 tbsp homemade Fajita Seasoning Blend
  • 2 striploin steaks
  • 3 avocados
  • 1 garlic clove
  • handful fresh cilantro
  • 1 lime
  • 2 tbsp red onion
  • freshly cracked pepper & salt
  • homemade or store bought tortilla shells (Sourdough discard tortillas)
  • neutral oil
  • tortilla shells

Toppings

  • salsa
  • sour cream
  • pickled jalapenos
  • cheddar cheese

Directions

  1. Mash the avocados and mix with grated garlic, fresh lime juice, cilantro and red onion. Season with salt and pepper.
  2. Bring the steaks to room temperature and pat them dry with a paper towel to remove any moisture.
  3. Heat your cast iron pan to medium high heat and add in neutral oil to coat the bottom. Once the pan is hot, season the steak generously with salt and pepper and add the steak to the pan. Cook the steaks to medium rare by searing on both sides for roughly 3 minutes. Or until a golden crust has developed. Remove the steaks and set aside to rest for at least 10 minutes.
  4. In the same pan, add the peppers and onions. Let these caramelize. Once the peppers are almost finished cooking, add fajita seasoning, salt and pepper. Toss the peppers in the seasoning and cook for a few more minutes.
  5. Assemble the fajitas with the guacamole, steak, peppers and your desired toppings.
