homemade mayonnaise


I’ve never tried making homemade mayonnaise until recently. During my exploration of making homemade condiments (I made a better than store bought ketchup), I decided that mayonnaise was an essential condiment that I needed to make. It only takes four ingredients to make and you probably have all of the ingredients at home. I really don’t like how store bought mayonnaise contains seed oils along with other heavily processed ingredients. Since I’ve eliminated seed oils from my diet I typically buy avocado mayonnaise. In this recipe I used a combination of avocado oil and olive oil. It gave the mayonnaise a fantastic flavour and we loved using it in our meals throughout the week! This recipe made about 3/4 of a cup. It doesn’t make a lot but it definitely tastes so much better than store bought! Since there is minimal ingredients in this recipe you want to make sure that you’re using good quality, local, farm fresh eggs and a good quality olive oil. Servings: makes 3/4 cup
Ingredients
- 2 egg yolks
- 2 tsp Dijon
- Juice from 1/2 a lemon
- 1/2 cup olive oil
- 1/2 cup avocado oil
- Pinch of salt
Directions
- In a litre container (or similar sized tall container) add the egg yolk, Dijon, lemon juice, salt and slowly pour in the oil while pulsing with an emersion blender. Blend this for a minute or so or until the mixture becomes thick and creamy.
- Store in an airtight container. This will last in the fridge for 2-3 weeks.
