Dauphinoise potatoes


Dauphinoise potatoes are a classic French bistro dish that uses a handful of simple ingredients. The potatoes are thinly sliced using a mandolin and are cooked in cream, butter and cheese (optional). As Ina Garten says, “how bad can that be?” From the moment I saw these potatoes I knew I needed to try them. This is a rich and indulgent side dish that’s classic French. I love how easy this recipe is to put together and it will surely elevate any meal. The dish originates from the Dauphiné region in southeastern France. It’s known for its rich, smooth texture and deliciously indulgent flavors. After the potatoes have cooked in the oven, they become soft, creamy and have a slight hint of garlic and herbs from the infused cream. Dauphinoise potatoes will become your new favorite side dish if you haven’t made them before.

Ingredients
- 2 ½ pounds Yukon Gold potatoes
- 2 ½ cups heavy cream
- 1 cup whole milk
- 8 sprigs fresh thyme
- 3 sprigs fresh rosemary
- 2 cloves garlic, crushed
- salt and pepper to taste
- 3 tbsp butter
- 1/2 cup parmigiano Reggiano
Directions
- In a medium saucepan, add heavy cream, milk, herbs and garlic. Bring to a simmer on medium-low heat and when it begins to slightly bubble, turn off the heat and let steep for 20 minutes. Season heavily with a generous pinch of salt and pepper. The cream mixture should be quite salty.
- Strain the cream mixture into a large bowl.
- Peel the potatoes and remove any blemishes. Using a mandolin slice the potatoes thin and add to the cream mixture. Toss the potatoes in the mixture.
- To a buttered baking dish, add a layer of potatoes (they can overlap slightly) and add a grating of parmigiano Reggiano cheese and a sprinkle of salt and pepper. Repeat this process until all of the potatoes have been layered in the dish. Pour the cream mixture over the potatoes. Add a final grating of parmigiano Reggiano on top and dot the top with butter.
- Bake in a 400° oven for 40-45 minutes or until the top is bubbling and golden brown.
