chicken meatballs


Chicken meatballs are a great meal prep item or they’re perfect for a quick weeknight dinner! I like to make a large batch of meatballs to eat throughout the week and have them in rice bowls or in a pita. These chicken meatballs are so easy to put together and can be made in under 30 minutes. All you need is onion, garlic, parsley, breadcrumbs, egg, Parmigiano Reggiano and seasonings. Sometimes I like to fry my meatballs but baking them in the oven is so much quicker and it doesn’t make a mess on your stove. You can eat the meatballs in a rice bowl (recipe below), in a Greek pita or with pomodoro sauce with pasta. It’s a chose your own adventure type of meal!

Ingredients
- 1 lb pasture raised ground chicken
- 1 egg
- 3/4 cup bread crumbs
- 2 tbsp freshly chopped parsley
- 1 large garlic clove
- 1 small white onion, grated
- 1 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 cup Parmigiano Reggiano, grated
Tzatziki (optional)
- 1 cup plain yogurt
- 1 small cucumber, shredded and squeezed of liquid
- 1/4 tsp lemon zest
- 1 glove garlic, grated
- 2 tbsp fresh dill, chopped
- salt and pepper to taste
Additional Ingredients (optional)
- Cooked rice (cook according to package instructions)
- kalamata olives
- feta cheese
- chopped cucumbers, tomato, dill and red onion (dressed with olive oil, lemon juice, salt and pepper.
Directions
- In a medium bowl, add ground chicken, parsley, egg, breadcrumbs, garlic, white onion, Parmigiano Reggiano, salt and pepper. Mix together with your hands. Do not overwork the mixture.
- Preheat the oven to 375 degrees. Line a baking sheet with parchment paper. Grease the parchment with olive oil spray or brush with olive oil. Spoon out 2 tbsp of meat and roll into a ball using your hands. Place the meatballs on the baking sheet. Continue to roll the meat into balls. Brush each meatball with olive oil. Bake in the oven for 18-20 minutes, flipping halfway through.
- If you are using the meatballs for rice bowls, prepare the rice and tzatziki while the meatballs are cooking. To make the tzatziki, grate garlic into a bowl and add shredded cucumber, ensuring that you squeeze out the liquid by placing it in a cheese cloth or paper towel. Add yogurt, lemon zest, chopped dill and season with salt and pepper. Mix to combine.
- You can eat the meatballs in a rice bowl with tzatziki, feta and vegetables. You can also eat them in a Greek pita or with pasta and pomodoro sauce.
