Banana bread is one of my favoirute things to make and eat and when I saw these banana chocolate chip cookies I knew I had to make them immediately. They’re so easy to make and are made in a similar way to banana bread. They’re fluffy, super moist and it tastes like you’re eating a piece of banana bread but in a cookie form. The coconut oil makes them extremely moist and they are seed oil free! They can also be made using honey instead of cane sugar. I used a mix of cane sugar and coconut sugar. They were a huge hit!

Ingredients

  • 1/2 cup mashed bananas
  • 1/3 cup melted coconut oil
  • 1/4 cup cane sugar
  • 1/4 cup coconut sugar or brown sugar
  • 1 tsp pure vanilla extract
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/2 cup chocolate chips
  • 1 cup + 1/4 cup AP flour

Directions

  1. Preheat oven to 350 degrees F.
  2. Mash the bananas and combine with coconut oil, sugars, vanilla, salt and baking soda.
  3. Add the flour and mix. Add the chocolate chips and mix.
  4. Using an ice cream scoop, scoop out the batter onto a parchment lined baking sheet.
  5. Bake cookies for 12-15 minutes or until golden brown. Sprinkle with flaky salt once out of the oven (optional).
