Banana Chocolate Chip Cookies


Banana bread is one of my favoirute things to make and eat and when I saw these banana chocolate chip cookies I knew I had to make them immediately. They’re so easy to make and are made in a similar way to banana bread. They’re fluffy, super moist and it tastes like you’re eating a piece of banana bread but in a cookie form. The coconut oil makes them extremely moist and they are seed oil free! They can also be made using honey instead of cane sugar. I used a mix of cane sugar and coconut sugar. They were a huge hit!

Banana Chocolate Chip Cookies
Prep time: 10 minutes
Cook time: 45-50 minutes
Total time: 1 hour
Servings: 6-8
Ingredients
- 1/2 cup mashed bananas
- 1/3 cup melted coconut oil
- 1/4 cup cane sugar
- 1/4 cup coconut sugar or brown sugar
- 1 tsp pure vanilla extract
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1/2 cup chocolate chips
- 1 cup + 1/4 cup AP flour
Directions
- Preheat oven to 350 degrees F.
- Mash the bananas and combine with coconut oil, sugars, vanilla, salt and baking soda.
- Add the flour and mix. Add the chocolate chips and mix.
- Using an ice cream scoop, scoop out the batter onto a parchment lined baking sheet.
- Bake cookies for 12-15 minutes or until golden brown. Sprinkle with flaky salt once out of the oven (optional).
