Thanksgiving leftover sandwich

I started making leftover Thanksgiving turkey sandwiches a few years ago after Thanksgiving and it’s a sandwich that I can’t get enough of. I may enjoy this sandwich more than the actual Thanksgiving dinner. This Thanksgiving turkey sandwich captures the essence of the holiday in every bite. Imagine layers of tender, succulent turkey piled high between slices of your favorite bread and smothered in hot gravy. The sandwich is complemented by a sweet and tangy cranberry sauce that adds a burst of flavor. I like adding in a touch of stuffing and homemade garlic aioli. You could also add in your favorite cheese or mustard. I enjoy toasting the bread in a pan with some butter to add flavor and crunch. t’s a delightful blend of flavors and textures that brings the warmth of Thanksgiving to your lunch table!
Once you start making this sandwich, I can guarantee that you will make it every year. It’s something I always look forward to making after Thanksgiving. My mom always makes more than enough food, so luckily for me there are always lots of leftovers. You could eat the leftovers as is, but they work so well together in this sandwich and it’s something I always crave right after the Holidays.

Ingredients
- 4 slices of sourdough bread
- leftover Thanksgiving turkey
- leftover gravy + extra for dipping
- leftover mashed potatoes
- leftover stuffing
- cranberry sauce
- garlic aioli
- Boston lettuce (optional)
- olive oil for drizzling
- 2 tbsp butter
Directions
- Heat a non stick pan to medium heat. Butter one side of the bread and fry until golden. Alternatively, you could toast the bread in the toaster or oven. Remove the bread and set aside.
- Add a drizzle of olive oil to the pan and fry the mashed potatoes until they become slightly golden. Remove and set aside. Heat up the stuffing for a few minutes. Remove and set aside. Add the turkey and some gravy along with a splash of stock or water to loosen up the gravy. Heat until warm.
- Assemble the sandwiches by adding a layer of garlic aioli to one side of the bread and cranberry sauce to the other side. Layer on the mashed potatoes, stuffing and turkey. Add lettuce, cut in half and enjoy.
